Recipe of the Week: Plum Cake

A twist on the classic fruit cake

Classic fruit cake is normally made with candied fruit, nuts, spices, and alcohol. This plum cake recipe is my healthier version of fruit cake because it does not contain high concentrations of sugar. I find fruit cakes like this are perfect to snack on during the summer because they are light and still leave you with a satisfied feeling.

Ingredients:

  • 2 cup flour
  • 1 stick butter (softened)
  • 1 1/4 cup sugar
  • 1 cup buttermilk
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp lemon zest
  • 2 plums, cut

Preheat the oven to 350 F. Grease a medium sized loaf pan. Mix the flour, baking soda, baking powder, and salt. In a larger bowl, cream together the butter and sugar until fluffy. Add in the vanilla extract and lemon zest. Add egg and beat well. In three batches, add the flour, alternating with the buttermilk. Mix until just combined. Pour 3/4 of the batter into the loaf pan and level. Place the plum pieces in the batter. Pour the remaing batter over the plum pieces and level it out. Bake for 25 - 40 minutes or until a toothpick inserted comes out clean. Allow the loaf to cool for at least 10 minutes. Serve warm.
