Recipe of the Week: Jalapeño Cheddar Buns

In the mood for some dinner biscuits? Try this recipe!

Biscuits have always been one of my food obsessions. Over the years I have tried to stay away from eating too many biscuits for fear of consuming too many carbohydrates but it sure has been difficult. I wanted to make a recipe that embodied the classic buttermilk biscuit but also add some modern flavors.

For this recipe, the buns are big, very fluffy, and tender- all qualities biscuits have. However, with the addition of two key ingredients (cheddar cheese and jalapeño peppers) these buns taste outstanding. The cheddar cheese adds a tangy taste while the jalapeño peppers give a spicy kick to the buns. Pair this recipe with rotisserie chicken and corn and you will have quite the delicious dinner menu!

  • 3 cups all-purpose flour
  • 4 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp sugar
  • 2 sticks of cold salted butter, cut into ¼-inch cubes
  • 1 1/2 cups cold buttermilk
  • 2 medium sized jalapeno pappers
  • 1 cup of cubed cheddar cheese
 

Directions: 

Preheat your oven to 450º.

Place the flour, baking powder, baking soda, and sugar in the workbowl of a large food processor. Process and remove the cover and distribute the butter, cheese, and jalapeno peppers evenly over the dry ingredients. Cover and process. Remove the cover and pour the buttermilk evenly over the dough. Process until the dough gathers into moist clumps.

Transfer the dough to a lightly floured surface and quickly form into a rough ball. Pat the dough into a ¾-inch-thick circle. Push together the remaining pieces of dough to the same thickness, until dough is used. Place buns on a greased cookie pan. Bake until the bun tops are light brown, 10 to 12 minutes. Serve immediately.
