Recipe Of The Week: Huevos Rancheros In A Basket

Need to spice up your brunch menu? Want to add a kick to the start of your day? Try this healthy and unique take on eggs in basket.

This is a healthier version of eggs in a basket. Instead of the popular version of a fried egg inside the middle of a piece of bread, I chose to bake my dish and cover it in a ranchero sauce. This recipe can make a lovely brunch item, and the ranchero sauce can easily be switched out with fresh herbs and hollandaise sauce for topping if you please.

Ingredients  (Yields 2 servings) 

3 eggs

3 pieces of bread (You can use any type of bread. I used oat nut bread because it is my favorite and more healthy.)

(For the ranchero sauce)

1 large sized tomatoes

1.5 tsp tomatoe paste

2 tbsp red onions

2 tbsp red capisicum

1/4 cup black beans

2 tbsp cilantro (use half for garnish)

2 cloves of garlic

1/2 tsp cumin

1/2 tsp paprika

1 green chili (optional)

1-2 tsp oil

salt to taste

Directions

For the ranchero sauce:

Cut the large tomato, red onion, red capisicum, cilantro, and garlic into small pieces. Next, add all of the cut ingredients and the tomato paste, cumin, paprika, and chili (optional) into the blender. Remember to save half of the cilantro for garnish. Pulse the blender for 5-10 seconds so the sauce is mixed but no liquidified. In a small pan, stir fry the black beans in oil for about 3 minutes. Pour the sauce you blended into the contents of the small pan and add salt to taste. Stir fry for about 5 more minutes. I like to add more cilantro to my sauce when stir frying but that is up to personal taste.

For the eggs in a basket:

Preheat the oven to 375F; spray three muffin wells with PAM spray. Trim the bread to fit inside the muffin wells. Place a piece of bread into each muffin well, and then gently crack an egg onto each piece of bread. Bake until the egg reaches your desired consistency. Baking the eggs for about 15-18 minutes gives set whites with runny yolks. Increase the time from there if you like a more well done yolk. To serve, let the egg rest for about 5 minutes in the muffin tray then run a sharp paring knife around the outside and use a fork to gently remove the "basket". Top your finished product with the racheros sauce and garnish it with the remaining cilantro.
