This recipe is my master piece. When I was growing up one of my favorite ice cream flavors was called "Cherry Garcia." I use to beg my mom to buy a carton of it any time I found out she was going grocery shopping. Over the years it has been hard to find that same flavored ice cream in the grocery stores.
I wanted to make a dessert that would live up to my found memories of "Cherry Garcia" and this recipe is what I came up with. Try it and I guarantee you will fall in love! The brand of vanilla ice cream used for this recipe is not important- just make sure it is a simple vanilla flavor.

- 1/2 cup chopped cherries
- 2 cups flour
- 1/4 cup sugar
- 1 cup vanilla ice cream
- 2 tbsp light cream
- 1 tbsp baking powder
- 1/2 cup cold butter cut into 1/2 inches
Directions
Preheat the oven to 450 F. Stir together the flour, sugar, and baking powder in a large bowl. Cut the butter and icecream into the flour mixture using your hands or a blender until mixture is crumbly. Place bowl in the freezer for 5 minutes. Add the cherries and mix gently. Add the cream and mix until the dry ingredients are just moistened. Add more cream if necessary to create a crumbly dough that just sticks together. Form 7-8 medium sized scones with dough. Place scones on a parchment lined baking sheet and bake at 450 F for 13-15 minutes.
