Where Can I Buy Corned Beef in Foxborough?
Two businesses in town will have all your St. Patrick's Day needs covered.
With St. Patrick's Day just around the corner residents Irish for life and Irish for a day are looking to get their fill on traditional Irish fare.
Topping the list is corned beef, a salt-cured meat, popular with cabbage or in soup.
In Foxborough, you can buy corned beef at Trader Joe's at Patriot Place or at Stop & Shop on Route 140 Main Street.
Trader Joe's, on its website, offeres a simple recipe for corned beef and cabbage teeny tiny yellow potatoes:
- 1 package TJ's Uncured Corned Beef Round Flat
- 2 bags TJ's Teeny Tiny Yellow Potatoes, washed
- 1 head TJ's Cabbage, sliced into about eight wedges
Cook corned beef according to package directions. At the last hour of cooking, add the potatoes to the pot and continue to cook until the meat is very tender and begins to fall apart. When the meat and potatoes are done, remove them from the pot and reserve the liquid. Place on a serving platter and cover with foil. Add cabbage to the reserved pot liquid and simmer for 15 minutes or until cabbage wedges are soft, but not quite limp (to preserve wedge shape). Remove the cabbage wedges from the pot and add to the serving platter. Serve warm.
